The Mac very much …
The Mac very much IS a computer. People just say it isn’t because it isn’t what they’re used to. Mac computers use the same internal components. Macs just have a different OS (Operating System). Hence the Mac –OS– X. Windows, Mac, and any plain old machine all have operating systems, otherwise you couldn’t do anything with them. And no machine in particular was the first to have a GUI. Any Linux/Unix OS’s were the first.

Yeah, they released …
Yeah, they released the Apple I, Apple II, etc. as their first products but it still had the roman numeral to denote the model. The Xerox Alto preceded the Star and IIRC it was the Alto that Steve Jobs first witnessed while at PARC.

Didn’t Apple …
Didn’t Apple release a series of machines they just call “The Apple”? They didn’t have GUIs, but I thought those were the initial computers that Apple made.
Oh, and correct me if I’m wrong on this too: the Xerox Star had the first GUI in a computer. I think that’s it, though it might’ve been a different machine that came beforehand.

First of all, Apple …
First of all, Apple isn’t a computer. Second of all, neither the Lisa nor the Macintosh were the first computer to include a GUI.
